A simple yet delicious dish with a combination of meat and veggies. Best eat with steamed rice. This braised potatoes with minced pork recipe dated back to my beginning 2014 post. The new recipe come with added lemon juice.
Get 2 to 3 potatoes. Peel off its skin and sliced them into thin pieces. Then soak the sliced potatoes in water.
Next, slice the pork into thin pieces and then chop them into fine pieces. If the slicing process is skipped, during frying session, the minced pork will stick together to form big section of minced pork.
Now, it's time to chop some garlic into tiny pieces and fry them in the wok with some oil to give the fragrance smell.
IMPORTANT.
Remember to set the fire to very low level so that the small pieces of garlic won't turn into black carbon garlic.
What followed next is the minced pork. Mix and stir fry the minced pork with the fried garlic pieces. Add in pepper, oyster sauce, sugar (optional, for health conscious individual, this ingredient can skip) and some water.
Finally, it is the sliced potatoes turn to make their appearances in the chinese wok.
Stir fry all the ingredient. Add soy oyster sauce, dark sauce and more water to let all the ingredients simmer in the wok for about 10 to 20 minutes. Remember to cover the wok to quicken the simmering process.
The longer the simmering process, the softer and tastier will be the potatoes. Keep in mind the longer the simmering process, more water is needed as this process will dry up the water very fast. During this simmering process, I also add a few squeezes of lemon juice!!! This will make the meat taste of the dish to be less "profound".
