I didn't expect it to be so yummy when I first tasted fried brinjal with beaten egg in Sekinchan. It looks so simple and yet so mouth watering. 👍.
Ingredients
1. Brinjal
2. Eggs
3. Garlic.
Soak the cut brinjal in water with salt for half an hour.
Cut the brinjal into fine cubes. The finer the better as this will make the frying process faster and making them softer and blend easier with eggs.
Put some oil in a wok with low heat .Add diced garlic followed by the cubed brinjals. During stir frying the two ingredients, add pepper,sugar, salt, soy sauce and oyster sauce for seasoning.
When the brinjal cubes are soft enough, pour in beaten egg to the scatter brinjal cubes forming a crust over them.
When the beaten eggs look dried up, flip the crusted egg to the other side. When the egg and brinjal look brownish, it is time to be served on a plate and gulped down the throat.😋
